Ingredients

1 finely chopped onion

2 cloves of minced garlic

1-inch grated fresh ginger

2 teaspoons of ground turmeric

1 teaspoon each of ground cumin and coriander

1 cup of red lentils

4 cups of vegetable broth

1 can of coconut milk

Salt and pepper to taste

Fresh cilantro for garnish
Directions
Heat Tallow; sauté onion, garlic, and ginger until soft.
Add turmeric, cumin, and coriander; cook to release flavors.
Add lentils and broth; simmer for 20-25 mins until lentils are soft.
Stir in coconut milk; simmer for an extra 5 mins.
Season with salt and pepper; serve hot, garnished with cilantro.
