3 organic egg whites

2 tbsp Ossa Organic pasture-raised gelatin

7 tbsp organic honey

Pinch of pink Himalayan salt

1/2 tsp vanilla essence (optional)
Directions
Bloom gelatine in 4 tbsp filtered water; set aside.
Whisk egg whites until fluffy (about 3 mins).
Add honey, salt, and vanilla; combine with a whisk.
Gently heat bloomed gelatine until dissolved, then add to the bowl.
Whisk until the mixture is foamy and cloud-like.
Pour into a ceramic/glass dish.
Set in the fridge for at least 2 hours.
Cut and enjoy on top of cacao for a delightful treat.
